Homemade Oatmeal Creme Pies




I've been wanting to share this recipe for a while now. How many of you love Little Debbies? I did when I was I kid. Fudge Rounds were my favorite. It's funny how your taste buds change when you get older. I hate the taste of those things now. But an Oatmeal Creme Pie I don't mind...occasionally.

About a year ago I came across this recipe for Homemade Oatmeal Creme Pies and I thought I would try them out. They are delish!!  Well worth the time spent assembling. I will say that this a definite "special occasion" treat. Not an every day chocolate chip cookie kind of recipe. But they are very tasty. Also, a good bake sale treat! Now for the recipe.






Oatmeal Creme Pie Cookies
Ingredients
For the Cookie:
  • 3/4 cup butter
  • 1 1/2 cup white sugar
  • 1/4 cup light brown sugar
  • 1 1/2 Tbsp molasses
  • 2 eggs
  • 1 tsp kosher salt
  • 2 cups all purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 2 cups quick-cooking rolled oats
  • 2 tsp baking soda
  • 3 Tbsp boiling water
For the Cream Filling:
  • 1 – 7 oz. jar Marshmallow Cream
  • 1/2 c. shortening
  • 1 1/3 c. powdered sugar
  • 1 tsp vanilla
  • 1/2 tsp. salt
  • 2-3 Tbsp. milk
Instructions
For the Cookie:
  1. Cream the butter and sugars in a stand mixer.
  2. Add the molasses, eggs, baking powder, cinnamon and salt. Mix well.
  3. Add the flour and oats. Mix well.
  4. Dissolve the baking soda in the boiling water and mix into the dough.
  5. Scoop by rounded tablespoons onto parchment lined baking sheets (allow 2 inches for spreading) and bake at 350ยบ for 10-12 minutes until set around the edges.
  6. Let cool on the baking sheet.
For the Cream:
  1. Using an electric hand mixer, beat together the shortening and the marshmallow cream in a very large bowl (there will be splatter– you’ve been warned).
  2. Beat in the powdered sugar, 1/3 cup at a time.
  3. Add the vanilla and the salt.
  4. Beat in the milk, 1 tbsp. at a time, beating in between additions, until mixture is smooth and fluffy.
Assembly:
  1. Pipe about 2 tbsp. of the filling onto the underside of one cookie. Top with another cookie.

Oatmeal, Peanut Butter, Chocolate Chip Cookies

This is a recipe that I used to make a lot when my husband and I first got married. I didn't really know how to bake -or do anything well- back then. Wanting to bring something not out of a box to functions we would attend, I attempted this recipe and it turned out to be a success. How can you resist oatmeal, peanut butter, and chocolate all in one cookie? It's definitely best to bake these for somebody else and get them out of the house because they are not  "I'll only have one and walk away" cookies.


Oatmeal, Peanut Butter, Chocolate Chip Cookies

Ingredients:

  • 3/4 c butter (1 1/2 sticks)
  • 3/4 c peanut butter
  • 1 1/4 c packed brown sugar

  • 1 1/2 c granulated (white) sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 3 eggs
  • 1 1/2 tsp vanilla
  • 2 1/4 c all purpose flour
  • 2 2/3 rolled oats
  • 1 (10 oz) pkg - or 2 cups- chocolate chips

Directions:

    Beat butter and brown sugar in mixing bowl until creamy. Add sugars, baking soda, and baking powder. Beat until combined. Beat in eggs and vanilla. Beat in flour. Stir in rolled oats with a wooden spoon. Fold in chocolate chips.

    Drop dough onto ungreased cookie sheet 3 inches apart. Bake 8 minutes. Transfer to wire rack and cool.

    White Chocolate Chip Cranberry Cookies

    I know what you're thinking. Why are you posting about cookies when just yesterday you posted about losing weight?!!  Don't worry. They are not for me. I had a reason to make them, and although these are my 2nd favorite cookie (next in line to my chocolate chip cookies) I did not eat any...yet. I have thought about it. These are my White Chocolate Cranberry Cookies. So if I eat one...or two...I will be getting my fruit for the day, right? I'm only kidding, of course. But for those of you who aren't needing to lose any extra weight, or if you have an event coming up (Memorial Day get-togethers) and you need something to bring, these will be a hit every time!
    Now for the recipe.

    White Chocolate Chip Cranberry Cookies

    Ingredients:

    3 c flour
    1 tsp baking soda
    3/4 tsp salt
    1 c butter
    1 c brown sugar
    3/4 c white sugar
    2 eggs
    1 Tbsp vanilla
    1 c craisins
    1 1/2-2 c white chocolate chips (I like them with more)

    Directions:

    Preheat oven to 350°. Sift dry ingredients. Mix butter and sugars until well combined- light and fluffy. Add eggs and vanilla. Mix in dry ingredients. Add Craisins and white chocolate chips. Stir until just combined. Bake 10 minutes.


    If you have read my Chocolate Chip Cookie post, you will know that to get your cookies soft and gooey (that's how I like mine- I'm not a hard cookie kinda girl) then you should take them out of the oven to "bake" for a minute or two before transferring to cooling rack. Don't be deceived thinking they aren't done and cook them longer in the oven.
