This peppermint bark is something I love to make and give away during Christmas. I like the bright green color...and it tastes good, too. The mint flavor isn't too overpowering. The recipe is simple and when package up it makes a nice gift for teachers, neighbors, friends, or whatever baking extravaganzas you have going on.
For this recipe you will need:
- 1 package white chocolate chips
- 1 package green candy melts
- 1 tsp peppermint extract
- 2-3 candy canes, crushed
- Line a baking sheet with parchment paper or a silicon baking mat. Set aside.
- In microwave, melt white chocolate chips in 30 second intervals. Watch closely. White chocolate burns easily. Stir until smooth and spread onto prepared baking sheet.
- In microwave, melt candy melts. Stir in extract. Stir until smooth. Spread on top of white chocolate layer.
- Sprinkle with crushed candy canes.
- Chill until firm (about 10 minutes). Break into small pieces. Store in airtight container.
